4-Ingredient Low Carb Cheesy Spinach Bake

Ingredients
10 oz frozen chopped spinach, thawed and well-drained
1 cup shredded cheese (cheddar, mozzarella, or a blend)
3 large eggs
1/2 cup heavy cream
Salt and pepper, to taste (optional but recommended)
Cooking spray or a little butter, for greasing the baking dish
Directions
Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish with cooking spray or a little butter so the bake doesn’t stick.
Prepare the spinach: Thaw the frozen chopped spinach and squeeze out as much water as you can using your hands or a clean kitchen towel. The drier the spinach, the less watery your bake will be.
In a medium bowl, whisk together the eggs and heavy cream until smooth. Season with a good pinch of salt and pepper, if using.
Stir the drained spinach into the egg mixture, breaking up any clumps so it’s evenly distributed. Fold in about 3/4 cup of the shredded cheese, saving the rest for the top.
Pour the mixture into the prepared baking dish and spread it out evenly. Sprinkle the remaining cheese over the top for a nice golden crust.
Bake for 20–25 minutes, or until the edges are set, the center is just firm, and the top is lightly browned and bubbly. A knife inserted in the center should come out mostly clean.
Let the spinach bake rest for 5–10 minutes before cutting. This helps it firm up a bit more and makes it easier to slice into neat squares. Serve warm.
